Sprouted French Toast Stuffed with Banana = Sunday morning bliss.
As a kid I absolutely hated french toast. I would easily take missing a meal over eating it- without any second thoughts.Thankfully, our bodies are amazing things and my taste buds have renewed themselves, making way for a new found love of french toast. I don’t eat it often but I woke up the other morning feeling as if I needed to give myself a little extra lovin. Which I did, with a delicious breakfast of Ezekiel French Toast filled with a Banana mixture I whipped up. I topped it off with some plain bulgarian yoghurt but for the peoples out there that like a little extra sweetness I’m sure maple syrup or some raw honey would do the trick. It makes a great Sunday morning treat! Enjoy!
Ingredients for the French Toast:
2 slices of original Ezekiel bread
1 egg ( can use just egg white, BUT, the nutrients in the egg yolk aid in the digestion of the egg white)
1 teaspoon of pure vanilla extract
1/2 teaspoon of cinnamon
2-3 tablespoons of almond milk
Ingredients for Banana Filling:
1 small mashed banana
1 tablespoon of almond butter
1 tablespoon of coconut butter
1/2 teaspoon of cinnamon
1 tablespoon of plain yoghurt ( i used bulgarian but greek would work great)
2 teaspoons of ground flax seed
Method:
Preheat oven to 350 F.
Combine egg, teaspoon of vanilla, teaspoon of cinnamon, and 3 tablespoons of almond milk in bowl and whisk together. Take your two slices of Ezekiel bread and dredge them in the mixture, soaking both sides of each slice. Cook in oiled or buttered skillet over medium heat until both sides are well browned, about 2-3 min on each side. Transfer to plate.
In a medium sized bowl combine your mashed banana, coconut butter, and almond butter. Heat in the microwave for 1 minute to soften. Once soften, stir the combination until well blended. Stir in your yoghurt, cinnamon, and flax seed.
Spoon your banana mixture onto one of your slices of french toast then place your remaining slice on top, like a sandwich. Put your stuff french toast in the oven for 8 minuets.
Top off with plain yoghurt, nut butter, maple syrup, honey, or nothing!
If you end up with some extra banana mixture, you can refrigerate and use as banana butter on toast another day or mix in with your morning oatmeal. yum.
