Pomegranate Poached Pears + Very Berry Sauce

I have been absolutely dying to try out this recipe ever since I saw it in a nutritional book called The Super Antioxidant Diet and Nutritional Guide by Robin Jeep.  I have a small obsession with red pears and usually eat them just chilled in the icebox but this recipe brought them to a whole new level and is completely guilt free : ) My man and I ate them for dinner the other night because we had a late lunch, a Rainbow Chard+Goat Cheese+Turkey Bacon Omelet, and just wanted to have something small and sweet.  Now, while on that note, I did find these to be slightly too sweet for my taste. Although I did have another try omitting the pomegranate syrup and it was PERFECT. So if you are not too fond of super sweet things then I would refrain from putting any or much pomegranate syrup on yours. You could eat it as a gourmet dessert or a decadent breakfast, like my sister did. I hope you guys enjoy it as much as I did!

Poached Pears Ingredients:

6 medium red or green pears

2 cups unsweetened pomegranate juice

1 whole cinnamon stick

6 whole cloves

goji berries for garnish

fresh blueberries for garnish

Very Berry Sauce Ingredients:

2/3 cup raw cashews, unsalted

1/2 cup of frozen strawberries, defrosted

1 cup frozen blueberries, defrosted

8 soaked pitted dates ( simply cut open the dates and take out the seed)

1 cup almond milk

Method:

Peel the pears, leaving the stems intact. Slice a little off the bottom of each pear so they stand up when set down. In a large saucepan, place pears standing up snugly together. Pour in pomegranate juice and add cinnamon stick and cloves. Gently simmer on medium/low heat, covered, for about 20 minuets until the pears are tender. Gently remove the pears and refrigerate until ready to serve. Reduce the poaching liquid over high heat until it becomes a syrup, stirring occasionally.

In a magic bullet blender or a food processor, blend together all of the sauce ingredients for 2-3 minuets until very smooth and creamy. Refrigerate until ready to serve.

To serve, place a pear on a dessert plate and spoon the pomegranate syrup over pear, followed by the Very Berry sauce. Sprinkle a few blueberries around the base of the pear and top pears with a nice garnish of goji berries.
