Bananer Balls….. Spheres.
BANANA BALLS …. SPHERES.
My friend Taylor and I made a batch of these goodies a couple of months back and my boyfriend has been craving them ever since so, seeing as it was Valentines day, I decided to whip up a few….dozen. They are healthy and pretty dense so all you need is 1 or 2 to feel satisfied. I am not a huge fan of super sweet things so these were perfect, the grain taste perfectly balances out the sweetness.
Ingredients:
3 large ripe bananas, mashed well
1 teaspoon vanilla extract (not vanillian, which is just an array of chemicals designed to taste like vanilla)
1/4 cup coconut oil, barley warm * ( I put mine in a coffee mug and put it on the stove for a few min, or you could use a microwave like a normal human being)
2/3 cup of almond meal ( I made my own by pulsing some almonds in a food processor)
2 cups of rolled oats ( presoaked)
1/3 cup of unsweetened shredded coconut
1/2 teaspoon of cinnamon ( I am a cinnamon addict and always seem to “accidentally” spill a little more)
1/2 teaspoon of fine grain sea salt
1 teaspoon of baking powder ( I used none b/c my boyfriends pantry consists of a jar of peanut butter and plastic spoons, and they turned out fine and dandy)
1 chopped dark chocolate bar
Method:
Preheat oven to 350 degrees F.
In a large bowl combine the bananas, warmed coconut oil, and vanilla. Put off to the side. In a smaller bowl mix together the oats, almond meal, shredded coconut, cinnamon, salt and baking powder. Pour the dry ingredients into the wet ingredients and stir until well combined. Fold in the dark chocolate chip chunks. Form small spheres ( about a tablespoon’s worth) and place on a oiled cookie sheet each about a half inch apart. Bake for 12-17 minuets depending on your oven and preference. Should be slightly crispy and browned on the outside and soft like a muffin on the inside.
Makes about 2-3 dozen depending on your sphere size.
